Everyone loves pumpkin! These Pumpkin Spice Power Balls are quick and easy to make and are a healthy snack or dessert. They’re packed with healthy fats, protein, fiber and of course pumpkin spice.
Pumpkin Puree
In this recipe, I use canned pumpkin puree since it’s easy, but you can naturally use fresh home-made pumpkin puree as well.
When buying canned pumpkin puree make sure you buy unsweetened pumpkin puree and NOT pumpkin pie filling. I used the brand Farmer’s Market Organic Pumpkin Puree.
Gluten-Free Oats
For the oats, I recommend quick cook oats since it makes for a smoother power ball.
Oats are in essence gluten-free, but regular oats tend to be cross-contaminated with gluten since gluten grains such as wheat are processed in the same equipment. So make sure you choose gluten-free oats. If the oats also are organic, even better.
Make by Hand or Machine
I have made these Pumpkin Spice Power Balls both by hand in a stainless steel bowl with a wooden spoon, and in a stand mixer.
When using the stand mixer I go for the silicone edge beater to keep the mixture from getting stuck in the whisk.
